Devotee of quality Provence produce with is peerless flavours and scents, Louis Rameau draws inspiration from the ancient traditions of Provence. Nestled away among stunning natural surroundings, the Château de Berne at the heart of the Var region, and its restaurants reserve a special place for the fruit and vegetables grown in the vegetable garden as well as quality produce sourced from small producers.
A stone's throw from the gourmet restaurant, the French-style vegetable garden in the château gardens is also a treat for the eyes! Carrots, radishes, heirloom tomatoes, spinach, purple artichokes, aubergines, courgettes, peach, apple and pear trees, a forest of berries (red currants, blackberries, blackcurrants...), herbs, and flowers flourish in the 3,000 m² garden and end up on the plates of our restaurant guests, much to their delight!
Pleasure is the essence of the Château de Berne: an underground cellar linking the hotel and spa offers delicious discoveries. Our sommelier offers lovingly selected products, including Provençal wines and cheeses and classics from across France. In the cheese cellar, the sommelier refines the selected seasonal products.
From the very beginning, the estate had produced its own olive oil, an exceptional product reflecting the unique terroir. With over 5000 trees, the estate's olive groves produce a wide variety of olives belonging to the Côtes de Provence appellation. Sold as single-variety or blends, our olive oils are recognised for their green fruity aromas.
The main varieties are:
Bouteillan with its subtle vegetable notes,
Cayon which provides sweetness,
and Cayet Roux whose notes of apples provide lightness.
Every year, we replant new plots. We now have over 4000 productive trees, most of which are around thirty years old.
