You'll play an essential role in the kitchen, assisting the Chef to ensure that your job is carried out hand in hand with the rest of the team, from setting up the service to cleaning it up.
You will be responsible for the following tasks:
- Assiste le Chef dans ses fonctions et le remplace en son absence
- Participe à l'application des standards, des procédures de production et des normes d'hygiène HACCP en vigueur au sein du Château de Berne.
- Participer à l’élaboration de la carte en collaboration avec le chef.
- Participe à la bonne coordination journalière du service, au développement et à l'accompagnement de l'équipe.
- Savoir prendre en main chaque poste de la cuisine, le tenir, effectuer les dressages et le nettoyage du poste
- Contrôler les stocks et les gérer, préparation des commandes pour les fournisseurs
- Etablir les emplois du temps, gérer les heures supplémentaires,
- Animation des ateliers culinaires (Brunch, salons, cours de cuisine, etc...)
- Respecter et faire respecter le matériel et les équipements mis à disposition…
- Gérer l’équipe de cuisine(chefs de partie, commis, apprentis, stagiaires)
Vous êtes flexible, rigoureux(se) et polyvalent (e).
You like encadrer et manager une équipe dans le respect de la culture de notre entreprise.
You have a CAP/BEP cookery training et une expérience minimum de deux sur le même poste dans un établissement étoilé.
You are familiar with HACCP rules.
You like teamwork and links with the brigade and you're someone from dynamic, motivated, autonomous and organised.
